Godrej Vikhroli Cucina launched the eighth edition of the Godrej Food Trends Report 2025 through a unique food theatre performance titled Feast for the Future. This year’s report, themed Seasons, was unveiled via storytelling, satire, and sensory drama, highlighting food as identity, memory, and emotion—moving away from traditional speeches and presentations.
Compiled with insights from over 190 experts, including chefs, nutritionists, mixologists, and food entrepreneurs, the report explores key trends shaping India’s evolving food and beverage landscape. The theme of seasonality stands out, with 82% of contributors pointing to a consumer shift toward local, seasonal produce and culturally rooted ingredients. This shift influences both home cooking and fine dining.
Tanya Dubash, Executive Director & Chief Brand Officer at Godrej Industries, emphasized that food is more than sustenance—it’s a cultural and emotional experience. She noted that the report has become a strategic tool for shaping new products and narratives across the food industry since its inception in 2018.
Among the findings, 74% of experts predict a rise in immersive tasting menus, while 66% highlight the growing demand for frozen gourmet snacks. Himalayan cuisines are gaining traction, with 85% noting their appeal for clean-label eating and regional storytelling. Additionally, 78% of contributors foresee a rise in heritage alcohols like feni and mahua, and 89% crowned Goa as India’s top food destination.
The theatrical unveiling introduced characters like a fine-dining purist and a frozen food loyalist, who represented various perspectives on modern food culture. Their playful conflict revealed the report’s insights as lived experiences rather than just data.
Partners like Crazy Cock Whisky, Simba Beer, Sula Wines, and Creamline Dairy Products participated, reinforcing the cultural and commercial relevance of the trends.
Rushina Munshaw Ghildiyal, Curating Editor of the report, reflected on how seasonality and memory influence food choices. Celebrity chef Amrita Raichand praised the experience as emotional and thought-provoking, noting how it brought food trends to life in a powerful way.
